In PostgreSQL, adding a new column without a default is instant for most cases:

ALTER TABLE orders ADD COLUMN status TEXT;

But adding a column with a default value can rewrite the whole table. If the dataset is large, this is a full table lock. The fix is to add it without a default, backfill in small batches, then set the default.

In MySQL, ALTER TABLE often rebuilds the table, which is expensive. Use ALGORITHM=INPLACE when possible:
